Quick and Authentic Pad Thai

I love this on a Wednesday night and pad Thai is on the menu. I first made this in a cooking class in Chiang Mai in northen thailand in 2016 and its one of the safest bet for a winning noodle dish. So much flavour and so easy to make!

Soak noodles in boiling water for 5 minutes then drain and rinse under cold water to stop from cooking further. Set aside.
