Potato and Pea Samosa

The samosa in my eyes doesn't get the true love it deserves. I like mine simple and somewhat traditional with potato and pea. The filling on its own makes a great curry but letting it cool and stuffing it into lovely samosas is just even better. Make sure to serve with some mango chutney.

Method

Turn cooking mode on

Step 1

Boil the potatoes, peeled and diced to 1 cm, in well-salted water for 8 minutes until just tender but not falling apart. Drain and leave to steam dry completely, as any moisture left in the potato will make the filling wet. Cook the frozen peas in boiling water for a couple of minutes, then drain and set aside to cool.

Sounds like a delicious DIY challenge, Amanda! I think it would also work with filo pastry but havent tried it, so thats on the list!. So glad you enjoyed the flavors though! Give it a go again and let me know how it works out
