Porchetta with Mustard Butter Beans & Fennel Salad

My take onthe classic porcetta, but I use pork shoulder instead. Less fat but jsut as much flavour and full of aromatic seasonings. I serve it with a mustard butter bean and fennel salad. A perfect weekend treat.
