Ingredients: 1000 g Shallots; 2 sticks Celery; 2 tbsp Butter; 1 tbsp Olive oil; 1 tsp Sugar; 2 cloves Garlic; 1 tbsp Plain flour; 150 ml Dry white wine; 750 ml Beef stock; 1 tbsp Sugar; 2–3 sprigs Thyme; 1 Bay leaf; Salt; Black pepper; Sherry vinegar; Cognac; 2 Baguettes; 300–350 g Steak; Salt; Black pepper; Olive oil; Butter; 80–100 g Gruyère; 80–100 g Comté; Dijon mustard

When I made this, it was completely off the cuff and it turned out to be one of the best thing I’ve made in a very long time. A take on the classic french dip sandwich, but using shallots instead of onions and pairing it with a steak baguette served with a mega shallot soup to dip. Beautifully balanced!
