This is hands down the best way to have fajitas. Spatchcocked chicken with all the classic fajita seasonings, alongside vegetables that take on all the chicken juices. Served up in some tortillas with avocado crema and quick pickled shallots, its dangerously good!

How much tomato paste and olive oil do you use?

in the ingredients it listed as 1 tablespoon for tomato paste. Olive oil is to losen the mix, so use your best judgement, around 1 - 2 tablespoons.

Hey donna, I do 3 thinly sliced shallots, 1 teaspoon sugar, 1 teaspoom salt, 1 teaspoon vinegar, 1 teaspoon water. Shak then leave for 10 minutes.

The video appears to show 7 spice added, but it's not listed on the ingredients. Please could you double check the marinade, as the video looks like it has a couple of extras. :)

Hi Jenette, there are 7 spices in the ingredients listed already, plus salt and pepper. There is also tomato paste. My "secret spice mix" as shown in the video is my homemade blend, you wont be able to get this, but it doent matter as the core ingredients are listed. Enjoy!

Thanks James, I'm making this tonight! Some of the ingredients aren't copied over to the "method" page, FYI. Tomato paste/Lemon/Lime juice etc. I don't know if it's just my browser, but on my samsung internet it's appearing a bit buggy. Also, are these oven temps stated for fan oven? Thanks.
