Hi Will! Adding some of the reduced cooking liquid to the pork before grilling is a great idea for extra juiciness. Just be sure to watch closely as it can cause some extra steam. Enjoy!

Absolutely, Debbie! You can make the pork a day ahead. Just reheat and char on the BBQ when ready to serve. Cool it fully before storing it in the fridge. Enjoy!

How much is 2 sticks of lard. My package is a 16 oz block.

Two sticks of lard is typically about 8 ounces (or 1 cup), so you'll need half of your 16 oz block.
