Tuna Tostadas with Blood Orange

A starter that anyone would be impressed by and one that couldnt be easier.

Method

Turn cooking mode on

1.

Pat the tuna dry. Mix the wasabi, soy sauce and sesame, then lightly brush or rub this all over the tuna. Roll the tuna in the sesame seeds so it’s well coated. Press gently so they stick.

200 g Fresh Tuna

1 tsp Wasabi paste

1 tbsp Soy sauce

1 tsp Sesame Dressing

White sesame seeds

Black sesame seeds

Heat a pan over high heat with a thin layer of neutral oil. Once smoking hot, sear the tuna on all sides for about 20-30 seconds per side. We want a toasted sesame crust but a raw centre. Remove and rest briefly, then slice into thick pieces.

Neutral oil

For the sauce:

1.

Mix the mayo, wasabi, blood orange zest and juice, sugar and a pinch of salt. Taste and adjust. It should be creamy, sharp and a little bit of heat from the wasabi.

3-4 tbsp Mayo

2 tsp Wasabi paste

1/2 Blood orange zest

1 1/2–2 tsp Blood orange juice

Salt

To make the tostadas:

1.

Fry the tortillas in hot oil until golden and crisp. Drain on kitchen paper and season lightly with salt while warm.

Small corn tortillas

To assemble:

1.

Spoon or swipe some wasabi mayo onto each tostada. Add a little avocado, then top with slices of the tuna. Finish with spring onion, a slice of jalepeno, coriander and a few drops of chilli oil or sesame oil. Serve with blood orange or lime on the side.
