Steak and Stout Pie

I made this the first weekend I was alone at our new flat and got me thinking of previous home comforts. Steak and stout pie made with oxtail and beef rib, slow cooked for 4 hours before turned into a pie and cooked until golden. A perfect comfort dish for me.

Method

Turn cooking mode on

Step 1

Season the beef rib and oxtail heavily with salt and pepper. Add to a heavy based pan and sear on all sides to get a good colour on the meat. You need good caramalisation here. Remove from the pan.

This is a twist on a couple of recipes and you can really make it your own. Mix it up with different stouts or adding spices just to play around with flaours. Even add some strong cheddar to the filling!
