One of my favourite meat sauces to make. Ox or beef cheeks are one of the more affordable cuts and the reward to effort ratio is amazing. 20 minutes of work and a little patience and you are left with a world class comforting dish.

Absolutely great. I couldn't get ox or beef cheek so settled with supermarket beef shin. Cooking for two after the long slow cook the sauce was quite dry. Instead of just water I added more Passata to loosen and I think it was too much. However, refrigerated Leftovers/next day lunch was incredible. A real bold meal with the Rigatoni! Thankyou James!

Using beef shin sounds like a great swap, Colin! If the sauce feels too dry, a bit of passata is nice but play around with small amounts first to get your perfect consistency. Glad day two was such a hit!
