Herby Marinated Pork Chops with Mustard Beans

My favourite 30 minute dinner - herby marinated bone in pork chops with a mustard, potato, butter bean and leeks cooked in a lovely chicken stock. It’s not going to in awards for presentation but it’s tasty.

Firstly the pork comes out incredibly well. But the recipe is let down a little by the accompanying beans - it's all a bit bland and flat. With a kick of something it would be perfect - suggestions welcome!

Squeeze of lemon or a touch of vinegar in the sauce would achieve that kick if you wanted! . But depends on your palate! Add what you want!
