Ingredients: 3 Aubergine; Sea salt; Neutral oil; 2 tbsp Extra virgin olive oil; 2 Garlic clove; 800 g Chopped tomatoes; 1 handful Fresh basil leaves; Salt; Black pepper; 1 pinch Sugar; 250 g Mozzarella; 80–100 g Parmigiano Reggiano; Basil; Extra virgin olive oil

My take on an Aubergine parmigiana, made with some of the best vegetables I’ve been lucky enough to get my hands on. I first made this in the summer at the height of tomato season and the flavour really showed. Served with a crunchy fennel salad its a great dish for the summer.
